About the recipe:
Here is a very mild and flavourful recipe. Let us learn to prepare this healthy and delicious "Vegetable kuruma". This tastes great with chapathi, poori, appam and idiyappam.

Serves: 2-3
Ingredients needed:
Vegetables: 2 cups
(carrot,beans,peas,potato,cauliflower)
Oil: 1 tbsp
Cumin seeds/Jeera: 1 tsp
Turmeric powder: a pinch
Salt: as required
Water: ½ cup
Coriander leaves: a few
Curry leaves: a few
For grinding:
Coconut: ½ cup (shredded or
pieced )
Green Chilly: 2
Red Chilly: 1
Cardamom: 2
Cinnamon: ½ inch piece
Cloves: 2
Fennel seeds: ½ tsp
Ginger: 1 inch piece
Garlic: 3 nos
Roasted gram/pottukadalai: 1
½ tsp
Preparation:
1.Grind all the ingredients
mentioned under the grinding section
with a little water to a fine paste
2.Chop all the vegetables
into medium sized pieces. Do not chop them very finely
Method:
1. Heat oil in a kadai, add
cumin seeds.
2. Then add the chopped
vegetables, turmeric powder and mix it well
3. Add a little salt, close
the kadai with a lid and let it cook in a medium flame for 4 to 5 minutes. Make
sure to stir in occasionally.
4. Once the vegetables have
cooked, add the grounded paste and stir it gently
5. Add sufficient water and
check for salt
6. When it comes to a boil,
put off the flame
7. Garnish it with curry
leaves and coriander leaves, and now it is ready to be served.
Note:
1.Adjust the green chillies
as per your taste.
2.Do not try to add in chilly
powder into the kuruma after adding the grounded paste into the kadai, if you
want the kuruma to be a little more hot. That will spoil the taste. Just slit
and add in a green chilly into the gravy.
3.
If you want the kuruma to be more rich, you can substitute the fried gram with
few cashew nuts. Ensure to soak the cashews for 10-15 mins before grindingDo not forget to Hit +1, if you really like the recipe :)
